Oregon’s first USDA-approved salumeria, Olympia Provisions was established in 2009 in Portland. Utilizing old world techniques, these guys handcraft each salami using all natural ingredients and humanely raised, antibiotic- and hormone-free pork reared in the good ol' US of A. Their cured meats are held in natural casings and maintained in the organic white mold that protects them.
The signature sourdough flatbread crackers featured on our boards and boxes hail from Rustic Bakery. Founded in California in 2005, Rustic Bakery burst onto the scene, quickly becoming THE cracker that everyone wanted on their cheese boards. Ingredients are sourced locally and organically whenever possible, and we think that's pretty rad!
Kohama no Hachimitsu-Okinawa
This honey store and bee farm is located in Chibana, Okinawa near Camp Shields. There you can take a tour of their hive collection, sample some honey comb, or even buy some honey soft serve ice cream! The honey we use is 100% pure honey from Okinawan bees. The taste difference between this rich honey and mass-produced blended honey is very apparent, and even helps keep seasonal allergies at bay!
The Cheese Guy-Okinawa
John Davis, originally from England, has been living abroad in Japan since 1976. One thing he missed from back home was cheese, and after recalling making cheese with his mother during his youth, he decided to pursue cheesemaking as a business. Fast forward to today, where he operates a fully-equipped cheese factory located in Ozato, Nanjo-shi with over 130 cows on site! You can also visit his retail cheese shop in Nanjo at the JA Atoll Shopping Center.
