Oregon’s first USDA-approved salumeria, Olympia Provisions was established in 2009 in Portland. Utilizing old world techniques, these guys handcraft each salami using all natural ingredients and humanely raised, antibiotic- and hormone-free pork reared in the good ol' US of A. Their cured meats are held in natural casings and maintained in the organic white mold that protects them.
The signature sourdough flatbread crackers featured on our boards and boxes hail from Rustic Bakery. Founded in California in 2005, Rustic Bakery burst onto the scene, quickly becoming THE cracker that everyone wanted on their cheese boards. Ingredients are sourced locally and organically whenever possible, and we think that's pretty rad!
